its just one cookie!

      • 1 cup cashew butter

      • 1 egg

      • 1/4 cup coconut sugar

      • 2 tbsp maple syrup

      • 1 tsp vanilla extract

      • Pinch of salt

      • 1/2 tsp baking powder

      • 1/3–1/2 cup dark chocolate chunks

    • Preheat oven to 170°C (340°F).

    • Add cashew butter, egg, coconut sugar, maple syrup, vanilla, salt and baking powder to a bowl.

    • Mix until smooth and combined.

    • Fold through chocolate chunks.

    • Press into a lined square baking pan.

    • Bake for 18–22 minutes, or until lightly golden and just set.

    • Cool completely.

    • Slice into small cubes

    the cookie ‘blows up’ soufflé style then deflates. Serve cooled (or warm and gooey), fridge makes them even more solid to savour!
