1 cup cashew butter
1 egg
1/4 cup coconut sugar
2 tbsp maple syrup
1 tsp vanilla extract
Pinch of salt
1/2 tsp baking powder
1/3–1/2 cup dark chocolate chunks

Preheat oven to 170°C (340°F).
Add cashew butter, egg, coconut sugar, maple syrup, vanilla, salt and baking powder to a bowl.
Mix until smooth and combined.
Fold through chocolate chunks.
Press into a lined square baking pan.
Bake for 18–22 minutes, or until lightly golden and just set.
Cool completely.
Slice into small cubes
the cookie ‘blows up’ soufflé style then deflates. Serve cooled (or warm and gooey), fridge makes them even more solid to savour!
