Mini cheesecake sandwiches

Cookies:
3 tbsp nut butter (cashew for me!)
1 tbsp butter, slightly melted
1 egg
1 tbsp maple syrup (or honey)
2 tbsp coconut flour
3 tbsp almond flour (+ extra if the dough is too wet)
pinch of salt
Cheesecake:
1 cup each mascarpone, ricotta, cream cheese
1 tbsp vanilla extract
Pinch salt
(Honey to taste)
I love lemon rind - my son does not! - but it also adds that extra sweetness

preheat oven to 180°c
Mix all cookie ingredients to a dough and roll between parchment
Cut out before baking and carefully remove excess dough - make more cookies with it!
Bake 8-10min
For the cheesecake, whiz all ingredients, add honey to taste
Refrigerate while cookies bake and cool. It’s not so runny and pipes better!
Put mix into small bag, cut corner off a small section and pipe out like magic onto your cookies. Place another cookie lid on top and voila!
