    • 1 cup Medjool dates, pitted

    • 3/4 cup almond flour

    • 2 tbsp coconut / cassava flour

    • 2 tbsp almond butter or tahini

    • 1 tbsp maple syrup

    • 1 tsp vanilla

    • 1 tsp cinnamon

    • Pinch sea salt

    Sticky Toffee Coating

    • 2 tbsp cashew butter

    • 1 tbsp maple syrup

    • 1 tsp molasses (or use an additional soaked date)

    • Tiny pinch salt

    • Soak dates in hot water for 5–10 mins if needed, then drain well.

    • Blend all bite ingredients until a sticky dough forms.

    • Roll into balls

    • Mix coating ingredients keep two tbsp aside to pipe inside and the rest in a bowl for dipping

    • Cut a small hole in each ball with a knife that you’ll then use to reseal. Put caramel in a ziplock bag then snip a tiny hole to pipe into the centre of each ball from the base or side and seal the deal!

    • Add desiccated coconut and flaky salt then roll coated balls

    • Chill until firm.
