1 cup Medjool dates, pitted
3/4 cup almond flour
2 tbsp coconut / cassava flour
2 tbsp almond butter or tahini
1 tbsp maple syrup
1 tsp vanilla
1 tsp cinnamon
Pinch sea salt
Sticky Toffee Coating
2 tbsp cashew butter
1 tbsp maple syrup
1 tsp molasses (or use an additional soaked date)
Tiny pinch salt

Soak dates in hot water for 5–10 mins if needed, then drain well.
Blend all bite ingredients until a sticky dough forms.
Roll into balls
Mix coating ingredients keep two tbsp aside to pipe inside and the rest in a bowl for dipping
Cut a small hole in each ball with a knife that you’ll then use to reseal. Put caramel in a ziplock bag then snip a tiny hole to pipe into the centre of each ball from the base or side and seal the deal!
Add desiccated coconut and flaky salt then roll coated balls
Chill until firm.
