DIY yoghurt (overnight)

  • 1/2L milk

    1/8 cup yoghurt (double for bigger serve)

  • Heat milk over double boiler setup (metal pan over boiling water) to 80° for 20min (use your timer!) This changes the milk proteins and improves the yoghurt texture.

    Cool (off heat) for 40 min to 45°. Use your timer - it’s a lifesaver!

    Add 1/8 cup good previous batch yoghurt to ½ cup warmed milk, then pour in remainder

    Heat oven to coolest temp (50° probably), then turn off. Place yoghurt mix in oven overnight (6-8hours)

    Voila!

    (refrigerate before serving)
